Fresh Cupcakes

For my daughter’s second birthday today I needed to bring in some treats to her daycare class. I had great plans to make homemade cupcakes with frosting made from real butter and powdered sugar. After getting home from work yesterday, I realized I had no time to make the cupcakes…and decorate the house…and take her Toys R Us for a shopping spree….and well, sleep.
So off to the store I went. I found these amazing cupcakes from The Fresh Market. They have a new line of gourmet cupcakes in all different flavors. They have vanilla, chocolate, strawberry and my personal favorite red velvet. The location at 4223 Providence Road is closest to Alpha Mill.
The cupcakes are beautiful and yummy. I have to admit I just had to taste one last night. Her daycare party will be a success and those cupcakes are more beautiful than anything I could have made!

Ice Cream Dream!

One of my favorite treats is ice cream, especially Ben and Jerry’s! Although I love them all, my favorite flavors are Chubby Hubby, Cherry Garcia and Cookie Dough.
I have some good news for the Residents at Alpha Mill….and it involves ice cream!
From 12:00pm-8:00pm the Ben and Jerry’s Myers Park is offering a free ice cream cone to everyone!
The Free Cone Day is nationwide at participating locations. Ben and Jerry’s first ice cream stand opened more than three decades ago and in celebration, they offer this free day annually!

I plan on taking my 22 month-old daughter. She even loves ice cream more than me!

Super Bowl Pleaser
Shrimp Cocktail is always a hit at a party. Here’s a recipe that includes homemade cocktail sauce. Keep this in mind for your upcoming football or Grammy get-together.
Shrimp Cocktail Platter
2 lbs (or more) large shrimp, peeled and deveined
2 quarts salted water
Lettuce leaves
Lemon Wedges
Cocktail Sauce (recipe below)
Place shrimp in boiling salted water. Cook just until pink, about 3 to 5 minutes. Drain and chill.
Arrange chilled shrimp on a bed of lettuce leaves. Serve with lemon wedges and cocktail sauce.
Presentation Tip: Tie a blanched chive around some or all of the shrimp and arrange them attractively on a platter.
Cocktail Sauce
Combine 1 1/4 cups catsup, 4 tablespoons lemon juice, horseradish to taste, 1/2 teaspoon celery salt, and a pinch of salt. Serve chilled. Makes enough to dip about 5 pounds of shrimp.

You never thought granola would be a trendy snack, did you? I know I didn’t. I thought I was the only one that loved granola raw or in my yogurt. Sure enough, there are websites to custom order your own granola variation, and some cafes and bakeries nationwide are selling their own varieties. Check out this article on granola.
Cocktail Meatballs
Ingredients
- 1 pound lean ground beef
- 1 egg
- 2 tablespoons water
- 1/2 cup bread crumbs
- 3 tablespoons minced onion
- 1 (8 ounce) can jellied cranberry sauce
- 3/4 cup chili sauce
- 1 tablespoon brown sugar
- 1 1/2 teaspoons lemon juice
Directions
- Preheat oven to 350 degrees F (175 degrees C).
- In a large bowl, mix together the ground beef, egg, water, bread crumbs, and minced onion. Roll into small meatballs.
- Bake in preheated oven for 20 to 25 minutes, turning once.
- In a slow cooker or large saucepan over low heat, blend the cranberry sauce, chili sauce, brown sugar, and lemon juice. Add meatballs, and simmer for 1 hour before serving.

The Waiter Doesn’t Want You To Know This
When you go the restaurant, there is a certain language that waiters and waitresses speak that you should know about.
Basically, when they say one thing, they actually mean another. Can you think of anything you would like to know?
I just always wonder what they think when people ask for water and lots of lemons. It takes away from their bill, what to waiters think about that? All of my waiters out there, help me out.
